Potato &
Fish Salad with Herbs
For 6 as
a starter, 4 as a Main Course
Ingredients
500gr White Fish Fillets
250gr peeled & diced Granny Smith Apples
250gr cold boiled potatoes, diced the same size as the apples
4 tablespoons good Mayonnaise
2 tablespoons snipped Parsley
2 tablespoons snipped Chives
4 tablespoons snipped Chervil plus a few sprigs for garnishing
Method
- Place fish in a pan with enough lightly salted water to cover
- Bring slowly to the boil & then turn off the heat at once, leave
to cool
- Mix together apples, potatoes, herbs & mayonnaise in a serving
dish
- Very gently fold in the cold fish broken into small pieces
- Garnish with sprigs of chervil & serve with good hot bread
