New Potatoes and Herbs

Dressing sufficient for 1 kilo potatoes

 

Ingredients

Kilo New Potatoes
100gr Butter
2 tablespoons snipped Chervil
1 tablespoon snipped Mint
1 tablespoon snipped Parsley
1 tablespoon snipped Chives or Spring onion Leaves
Freshly ground Peppercorns & Salt to taste

Method

Clean the potatoes & place in a pan with all the stalks from the herbs & season (I tie the stalks together with strong cotton)

While the potatoes are cooking melt the butter until just liquid, take off the heat & stir in all the snipped herbs

Drain potatoes & remove stalks

Put potatoes into a warm serving dish, pour over the herb butter & serve at once

If you have surplus herb butter it will keep in a fridge for a week & will deep freeze for up to a month
