Chard

Chard is a leaf beet and is generally used like spinach. The distinctive white veins of the swiss chard or red veins of the ruby chard give it more body than spinach so it tends to be less mushy than spinach.

Swiss Chard Bake with Cream Cheeses, Basil and Parsley

Ingredients

400g Swiss chard
1 medium onion
120g cream cheese
1tbsp basil chopped
2 tbsp parsley chopped
1 egg
salt and freshly ground black pepper to taste

Method

Put washed chard in pan with no extra water, sprinkle with salt and cook gently, shaking pan for 10 minutes, drain well.

Combine chard, onion cream cheese, basil, parsley and egg together and season.

Put mixture into a buttered baking dish and bake in a moderate oven for 20-30 minutes.
