Lettuce
and Onion Soup

Ingredients
2oz butter
1 large onion chopped
1 large lettuce finely shredded
2 pints chicken stock
Salt and pepper
1/3 cup double cream
Method
- Heat butter in saucepan, add onion and gently fry until soft
- Add the lettuce and cook in the butter for a few minutes
- Add the stock and seasoning and bring to the boil
- Cover and simmer for 5-7 minutes
- Blend the soup until smooth
- Heat again then add the cream
