Lemon Broad Beans

Ingredients

1-2 shelled broad beans
Juice of 1/2 lemon
Freshly ground black pepper

Method

  • Gently simmer the beans for 10 minutes in a pan of salted water
  • Drain and allow the beans to cool
  • Carefully peel off the white outer skin of each bean
  • Squeeze over the lemon juice and season with black pepper
  • Serve as a salad accompaniment
