Herbed peas
Ingredients
2 tablespoons Olive or Sunflower Oil
4 tablespoons chopped Welsh Onions or Chives
6 rashers of Smoked Bacon, chopped up
454gr fresh peas (frozen Peas can also be used)
Freshly ground Peppercorns & Salt to taste & a pinch of Sugar
4 tablespoons snipped Spearmint or Applemint
Method
- Gently heat the oil then add Welsh onions or chives & bacon pieces
- Stir & cook gently until bacon has released all its fat
- Add peas, sugar, salt and pepper to taste
- Cook, covered, over a gentle heat for 10 minutes
- Remove cover & stir in mint
- Pour into a serving dish & garnish with mint leaves & mint
flowers, if available
